Barbecued Pulled Pork Sandwiches

Yield: 8 servings * Overall Price: ~$12 * Calories: ~570

Ingredients:
1 pork shoulder roast (about 21/2 pounds)
1 bottle (14 ounces) barbecue sauce
1 tablespoon fresh lemon juice
1 teaspoon packed brown sugar
1 medium onion, chopped
8 hamburger buns or hard rolls

Directions:
1. Place roast in crock-pot slow cooker. Cover; cook on low 10 to 12 hours or on high 5 to 6 hours
2. Remove roast from crock-pot slow cooker; discard cooking liquid. Shred pork using 2 forks. Return pork to crock-pot slow cooker. Add barbecue sauce, lemon juice, brown sugar and onion. Cover; cook on low 2 hours or on high 1 hour. Serve shredded pork on hamburger buns or hard rolls.

Thoughts:
This BBQ sandwich was really good. I had been craving BBQ for a long time and this was perfect for it!

Mickey Mouse Cake Pops

It's been a busy couple of weeks and I haven't been able to cook in a while. Two weeks ago, I went to see my brother, Andrew, swim in the NJCAA Swimming and Diving Championship in Buffalo, NY. It was a really fun trip, but really cold. It even snowed the last day. He ended up getting 15th in the 200 freestyle, 9th in the 500 freestyle, and 5th in the 400 IM. Last week was spring break! I went home and then on a cruise from Miami to the Bahamas with Paige, Andrew, and a few of his swimmer friends from college. We had a lot of fun! This week, I've just been busy catching up with school work and working out a new budget after spending a lot of money the weeks before.
While at home, I got to go to all four Disney parks and Downtown Disney. While at Downtown Disney, I saw some caramel apples that I could probably make into cake pops. I watched the guy make them and then yesterday tried to make the miniature versions of them. I think they turned out pretty well. :)
